PEAK’S PEOPLE, PLACES AND EVENTS

You wouldn’t be able to enjoy Peak Provisions if someone (actually, a team of people) didn’t build our space.

I’ve referenced them a few times in the past… but I want to talk about Mike and the team at Blue Water Concepts.

This is a family-run business that has helped build our existing Squamish community.

BWC handles their physical build-outs to the highest standards. And their commitment to each client's needs is second to none.

Building a home or a commercial business is emotional - you become attached to the idea and the execution. BWC listens to your requests and goes above and beyond to deliver.

Mike Vancapple is the Owner/Operator of Blue Water Concepts. He started this company here in Squamish over 7 years ago… at that time it was him and 2 other employees.

His passion for building and dedication to his clients continue to grow this company.

BWC now employs 45 people. All these employees call Squamish and the Sea to Sky corridor their home and their community.

Mike has lived in Squamish for 8+ years. And he convinced his Mom and Dad to move here from Muskoka. He dragged them out of “semi-retirement” and recruited them to work for him at Blue Water Concepts.

His father owned his own construction company for 35 years before his semi-retirement. So I’m guessing this is where Mike began his love and passion for building. Both physical structures and community.

BWC focuses on providing its clients with a “full service” experience. Meaning they can begin with clients very early on in the conception and ideation process. From there, they are able to bring the project through to completion through every single phase.

They employ architects, designers, estimators, project managers, red-seal carpenters, lead carpenters, apprentice carpenters and more.

You get the idea though. Mike and his team commit to seeing your project completed exactly the way you want.

And even when things don’t go the way you planned... like the second “tiny bathroom” here at Peak Provisions. Mike is there for his clients.

I felt totally supported. And while there was definitely some panic… we came up with solutions quickly and he and the BWC team had my back.

They executed and got Peak Provisions open. I am so happy with the way the store turned out. And I’m even more happy that I get to call Mike my friend now.

PROVISIONS WE LOVE

By now you may have come to get a sense of my love for European-inspired food and provisions.

Let's focus on the baguette, shall we?

Nothing is more French than a baguette (in my opinion anyway).

A freshly baked, crunchy baguette is pure culinary simplicity… at its best. (again, in my opinion)

Our “Parisian-inspired” sandwiches have become very popular.

Drawing on various EU countries and their culinary staples is how the Peak Provisions sandwich menu began.

The “Italian Baguette” sandwich is actually Mike’s favourite. You know… the guy who helped build this place? I was just talking about him a minute ago.

Served on our house-made baguette with aged prosciutto, provolone, muffuletta and olive oil. The Italian is a fan favourite for sure.

The “French Baguette” has Auyana Jamon blanc, Swiss cheese, dijon, cornichon & butter.

The “Veggie sandwich” comes on sourdough bread with roasted eggplant, zucchini, red onions, red peppers, whipped lemon feta and green sauce. (think green goddess but better)

We will continue to provide these three options as our deli counter staples. And seasonal European-inspired iterations will always be changing.

If there are any leftovers by the time we close the store, we will always drop off all the remaining sandwiches at the Squamish Women's Shelter. We want them to enjoy a lil taste of Paris too.

So come in and pick yours up before your next hike, picnic, or on your lunch break.

There will always be fresh-baked, whole baguettes available as well. And if the basket is empty, just ask anyone of the staff to bake you a fresh one.

 

AT THE BAR

It's almost summer… we’re so close. (only 26 days… but like, who’s counting?)

So I had to update the menu with some of my favourite warm-weather eats.

The SUMMER OF SALADS is here now.

These are twists on some classic salads that never fail to deliver

COBB SALAD   19

Made with locally sourced lettuce and mixed greens, roasted chicken breast, cherry tomatoes, avocado, stilton cheese, Oyama bacon bits and a mouth-watering house-made buttermilk dressing.

WEDGE SALAD   15

Iceberg lettuce, cherry tomatoes, Oyama bacon bits, stilton cheese, and the mouth-watering house-made buttermilk dressing. (add chickens for $6)


SHRIMP LOUIS   15

Iceberg Lettuce with baby local shrimp, avocado, shaved radish and house-made horseradish dressing

PEAK PROVISIONS SALAD   14

Local mixed greens, cucumber, cherry tomatoes, avocado, marinated onions, feta, sunflower seeds and house-made vinaigrette. (add chickens for $6)

These tasty dishes deliver in the flavour department and will fill you up. But they won’t leave you feeling bloated or uncomfortable in the summer heat.

So come in today and enjoy them on the new patio.
